Ingredients
- Fresh gnocchi: 500 grams
- Ripe tomatoes: 500 grams, chopped
- Mozzarella cheese: 250 grams, shredded
- Fresh basil: 1/2 cup, chopped (plus extra for garnish)
- Garlic: 3 cloves, minced
- Olive oil: 2 tablespoons
- Parmesan cheese: 50 grams, grated
- Salt: to taste
- Black pepper: to taste
Instructions
- Preheat your oven to 200°C (400°F).
- Bring a large pot of salted water to a boil and cook the fresh gnocchi according to package instructions (about 2-3 minutes) until they float to the surface. Drain and set aside.
- In a large mixing bowl, combine chopped ripe tomatoes, minced garlic, olive oil, salt, and black pepper. Mix well.
- Gently fold the cooked gnocchi into the tomato mixture and add half of the chopped fresh basil.
- Transfer the mixture into a baking dish, top with shredded mozzarella and grated Parmesan cheese, and bake for 20-25 minutes until the cheese is melted and golden brown.
