Gnocchi tomato bake is a delightful dish that combines soft, pillowy gnocchi with a rich tomato sauce and melted cheese, baked to perfection for a comforting meal.


Ingredients

  • Fresh gnocchi: 500 grams
  • Ripe tomatoes: 500 grams, chopped
  • Mozzarella cheese: 250 grams, shredded
  • Fresh basil: 1/2 cup, chopped (plus extra for garnish)
  • Garlic: 3 cloves, minced
  • Olive oil: 2 tablespoons
  • Parmesan cheese: 50 grams, grated
  • Salt: to taste
  • Black pepper: to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Bring a large pot of salted water to a boil and cook the fresh gnocchi according to package instructions (about 2-3 minutes) until they float to the surface. Drain and set aside.
  3. In a large mixing bowl, combine chopped ripe tomatoes, minced garlic, olive oil, salt, and black pepper. Mix well.
  4. Gently fold the cooked gnocchi into the tomato mixture and add half of the chopped fresh basil.
  5. Transfer the mixture into a baking dish, top with shredded mozzarella and grated Parmesan cheese, and bake for 20-25 minutes until the cheese is melted and golden brown.
