Description

Ingredients

  • ½ cup finely ground pistachios
  • ¾ cup powdered sugar
  • ¼ cup neutral oil (sunflower or canola)
  • 1 large egg
  • 1 teaspoon ground cardamom
  • ½ teaspoon gluten-free baking powder
  • Pinch of salt
  • Optional: whole pistachios for topping
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together almond flour, ground pistachios, powdered sugar, baking powder, cardamom, and salt.
  3. Add the egg and neutral oil to the dry ingredients and mix until a soft, moldable dough forms.
  4. Roll the dough into tablespoon-sized balls and place them spaced apart on the baking sheet.
  5. Flatten each ball slightly and press a whole pistachio on top if desired.
  6. Bake for 12-15 minutes until edges are lightly golden but centers remain soft.
  7. Allow cookies to cool on the baking sheet for 10 minutes, then transfer to a wire rack.
  8. Optionally, dust with powdered sugar before serving.
