- ¾ cup powdered sugar

- 1 large egg
- 1 teaspoon ground cardamom

- Pinch of salt
- Optional: whole pistachios for topping

Instructions
- Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together almond flour, ground pistachios, powdered sugar, baking powder, cardamom, and salt.
- Add the egg and neutral oil to the dry ingredients and mix until a soft, moldable dough forms.
- Roll the dough into tablespoon-sized balls and place them spaced apart on the baking sheet.
- Flatten each ball slightly and press a whole pistachio on top if desired.
- Bake for 12-15 minutes until edges are lightly golden but centers remain soft.
- Allow cookies to cool on the baking sheet for 10 minutes, then transfer to a wire rack.
- Optionally, dust with powdered sugar before serving.
