Description

Ingredients

  • 2 cups gluten-free all-purpose baking flour
  • 1/2 cup white sugar
  • 1 teaspoon gluten-free baking powder
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg, beaten
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups pitted and chopped fresh cherries (including juice)
  • 1/4 cup gluten-free rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 2 tablespoons cold butter, cut into pieces

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the gluten-free flour, white sugar, and baking powder.
  3. In another bowl, mix the milk, vegetable oil, beaten egg, vanilla extract, and almond extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  5. Fold in the chopped cherries along with their juice.
  6. Fill muffin cups about two-thirds full with the batter.
  7. In a small bowl, combine oats, brown sugar, white sugar, and cold butter. Mix with a fork or fingers until crumbly.
  8. Sprinkle the crumble topping over each muffin.
  9. Bake for about 20 minutes or until a toothpick inserted into the center comes out clean.
  10. Let muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.

  • Use fresh cherries for best flavor, or substitute with thawed and drained frozen cherries.
