- 1/2 cup white sugar
- 1 teaspoon gluten-free baking powder
- 1 cup milk
- 1/4 cup vegetable oil
- 1 large egg, beaten

- 2 cups pitted and chopped fresh cherries (including juice)
- 1/4 cup gluten-free rolled oats
- 1/4 cup brown sugar
- 1/4 cup white sugar
- 2 tablespoons cold butter, cut into pieces
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the gluten-free flour, white sugar, and baking powder.
- In another bowl, mix the milk, vegetable oil, beaten egg, vanilla extract, and almond extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
- Fold in the chopped cherries along with their juice.
- Fill muffin cups about two-thirds full with the batter.
- In a small bowl, combine oats, brown sugar, white sugar, and cold butter. Mix with a fork or fingers until crumbly.
- Sprinkle the crumble topping over each muffin.
- Bake for about 20 minutes or until a toothpick inserted into the center comes out clean.
- Let muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
- Use fresh cherries for best flavor, or substitute with thawed and drained frozen cherries.
- Don’t overmix the batter to ensure light, fluffy muffins.
- Add lemon zest for extra brightness.
