- 3/4 cup granulated sugar
- 1/4 cup packed brown sugar

- 1/3 cup vegetable oil or melted coconut oil
- 2 teaspoons pure vanilla extract or vanilla bean paste
- 1 and 1/2 cups chopped fresh strawberries
- 1 Tablespoon flour (for tossing the strawberries)
- 1/2 cup confectioners’ sugar (for icing)
- 1 Tablespoon heavy cream or milk (for icing)
- 1/4 teaspoon pure vanilla extract or vanilla bean paste (for icing)
Instructions
- Preheat your oven to 350°F (175°C) and prepare your 8×4-inch loaf pan by greasing it.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the egg, granulated sugar, brown sugar, buttermilk, vegetable oil, and vanilla until smooth.
- Combine the wet and dry ingredients gently, then fold in the floured strawberries.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 55 to 70 minutes, checking for doneness.
- Allow the bread to cool in the pan for 1 hour, then transfer to a wire rack to cool completely.
- For the glaze, whisk together the confectioners’ sugar, cream, and vanilla until smooth.
- Once cooled, drizzle the glaze over the bread and let it set before slicing.
Notes
For a different flavor, consider using other fruits or adding nuts. Store in an airtight container to keep fresh.
