  • 1/3 cup vegetable oil or melted coconut oil
  • 2 teaspoons pure vanilla extract or vanilla bean paste
  • 1 and 1/2 cups chopped fresh strawberries
  • 1 Tablespoon flour (for tossing the strawberries)
  • 1/2 cup confectioners’ sugar (for icing)
  • 1 Tablespoon heavy cream or milk (for icing)
  • 1/4 teaspoon pure vanilla extract or vanilla bean paste (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your 8×4-inch loaf pan by greasing it.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the egg, granulated sugar, brown sugar, buttermilk, vegetable oil, and vanilla until smooth.
  4. Combine the wet and dry ingredients gently, then fold in the floured strawberries.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 55 to 70 minutes, checking for doneness.
  6. Allow the bread to cool in the pan for 1 hour, then transfer to a wire rack to cool completely.
  7. For the glaze, whisk together the confectioners’ sugar, cream, and vanilla until smooth.
  8. Once cooled, drizzle the glaze over the bread and let it set before slicing.

Notes
