Instructions

  1. Optionally pulse shredded coconut for finer texture.
  2. Whisk flour, cornstarch, baking soda, and salt together in a bowl.
  3. Cream softened butter and 1 cup sugar until fluffy; add egg, lime juice, lime zest, and coconut extract and beat well.
  4. Fold in shredded coconut, then gradually mix in dry ingredients until dough is thick and sticky.
  5. Cover dough and chill in refrigerator for at least 1.5 hours.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll chilled dough into 1-inch balls, coat in remaining 1/2 cup sugar, and place on baking sheets with spacing.
  8. Bake for 12-13 minutes until edges are slightly golden; cool on sheets for 5 minutes then transfer to wire rack.
