Deliciously spiced cookies that combine the flavors of gingerbread and coffee, coated in creamy white chocolate.

- 2 cups old fashioned whole rolled oats
- 1 ¾ cups all-purpose flour
- 2 teaspoons espresso powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground ginger

- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ¾ cup unsalted butter, softened
- 1 cup packed light or dark brown sugar
- ¼ cup granulated sugar
- 1 large egg, at room temperature
- ¼ cup unsulfured or dark molasses
- 8 ounces white chocolate, chopped
- 1 teaspoon vegetable oil or coconut oil
- ½ teaspoon espresso powder
- A pinch of cinnamon
- A pinch of nutmeg
Instructions
- Pulse the rolled oats in a food processor until a mix of fine and coarse textures is achieved.
- In a medium bowl, whisk together the oats, flour, espresso powder, baking soda, salt, and spices.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and molasses, beating until fully combined.
- Gradually mix the dry ingredients with the wet mixture until just combined.
- Chill the dough in the refrigerator for 30 to 45 minutes.
- Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
- Scoop about 1.5 tablespoons of dough for each cookie and place them spaced on the prepared sheets.
- Bake for 12 to 13 minutes until edges are lightly browned.
- Prepare the white chocolate topping by melting the chocolate with oil and espresso powder.
- Dip cooled cookies halfway into the melted chocolate and sprinkle with spice mixture.
- Refrigerate cookies for about 30 minutes to allow the topping to set.
Notes
Store cookies in an airtight container for up to a week. Chilling the dough is essential for the right texture.
