Description

Deliciously spiced cookies that combine the flavors of gingerbread and coffee, coated in creamy white chocolate.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 2 teaspoons espresso powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground ginger

  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¾ cup unsalted butter, softened
  • 1 cup packed light or dark brown sugar
  • ¼ cup granulated sugar
  • 1 large egg, at room temperature
  • ¼ cup unsulfured or dark molasses
  • 8 ounces white chocolate, chopped
  • 1 teaspoon vegetable oil or coconut oil
  • ½ teaspoon espresso powder
  • A pinch of cinnamon
  • A pinch of nutmeg

Instructions

  1. Pulse the rolled oats in a food processor until a mix of fine and coarse textures is achieved.
  2. In a medium bowl, whisk together the oats, flour, espresso powder, baking soda, salt, and spices.
  3. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and molasses, beating until fully combined.
  5. Gradually mix the dry ingredients with the wet mixture until just combined.
  6. Chill the dough in the refrigerator for 30 to 45 minutes.
  7. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  8. Scoop about 1.5 tablespoons of dough for each cookie and place them spaced on the prepared sheets.
  9. Bake for 12 to 13 minutes until edges are lightly browned.
  10. Prepare the white chocolate topping by melting the chocolate with oil and espresso powder.
  11. Dip cooled cookies halfway into the melted chocolate and sprinkle with spice mixture.
  12. Refrigerate cookies for about 30 minutes to allow the topping to set.

Notes

Store cookies in an airtight container for up to a week. Chilling the dough is essential for the right texture.
