Ingredients
- All-purpose flour: 250 g (2 cups)
- Baking soda: 1 1/2 tsp
- Salt: 1/2 tsp
- Ground ginger: 2 tsp
- Ground cinnamon: 1 tsp
- Ground cloves: 1/2 tsp
- Ground nutmeg: 1/4 tsp
- Unsalted butter: 120 g (1/2 cup), softened
- Brown sugar: 150 g (3/4 cup), packed
- Large eggs: 2 (approx. 100 g)
- Molasses: 120 ml (1/2 cup)
- Hot water: 120 ml (1/2 cup)
- Milk: 60 ml (1/4 cup)
Instructions
- Preheat your oven to 175°C (350°F) and prepare your cake pan.
- In a medium bowl, whisk together the dry ingredients.
- Cream together the butter and brown sugar, then add eggs and molasses.
- Combine wet and dry mixtures, alternating with hot water and milk.
- Pour the batter into the prepared pan and bake for 35–40 minutes.
- While the cake cools, prepare the molasses glaze by combining ingredients in a saucepan and heating until smooth.
- Drizzle the glaze over the cooled cake and serve.
Notes
- Be careful not to overmix the batter.
- Use a kitchen scale for accurate measurements.
- Allow the cake to cool properly before removing from the pan.
