  • Ground ginger: 2 tsp
  • Ground cinnamon: 1 tsp
  • Ground cloves: 1/2 tsp
  • Ground nutmeg: 1/4 tsp
  • Unsalted butter: 120 g (1/2 cup), softened
  • Brown sugar: 150 g (3/4 cup), packed
  • Large eggs: 2 (approx. 100 g)
  • Molasses: 120 ml (1/2 cup)
  • Hot water: 120 ml (1/2 cup)
  • Milk: 60 ml (1/4 cup)

Instructions

  1. Preheat your oven to 175°C (350°F) and prepare your cake pan.
  2. In a medium bowl, whisk together the dry ingredients.
  3. Cream together the butter and brown sugar, then add eggs and molasses.
  4. Combine wet and dry mixtures, alternating with hot water and milk.
  5. Pour the batter into the prepared pan and bake for 35–40 minutes.
  6. While the cake cools, prepare the molasses glaze by combining ingredients in a saucepan and heating until smooth.
  7. Drizzle the glaze over the cooled cake and serve.
