Ingredients

  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 3 large egg whites
  • ¾ cup granulated sugar
  • ½ teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • Tiny chocolate chips (for eyes)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with dark chocolate cupcake liners.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the wet ingredients: eggs, milk, vegetable oil, and vanilla extract. Gradually add to the dry ingredients and mix gently.
  4. Stir in the boiling water until the batter is smooth, then pour into cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes.
  5. Allow cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  6. For the meringue frosting, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form. Mix in vanilla extract.
  7. Once cupcakes are cool, pipe the meringue frosting on top in a ghostly shape and add chocolate chips for eyes.
