- 1 cup granulated sugar
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 3 large egg whites
- ¾ cup granulated sugar
- ½ teaspoon cream of tartar
- 1 teaspoon vanilla extract
- Tiny chocolate chips (for eyes)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with dark chocolate cupcake liners.
- In a large bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the wet ingredients: eggs, milk, vegetable oil, and vanilla extract. Gradually add to the dry ingredients and mix gently.
- Stir in the boiling water until the batter is smooth, then pour into cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes.
- Allow cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- For the meringue frosting, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form. Mix in vanilla extract.
- Once cupcakes are cool, pipe the meringue frosting on top in a ghostly shape and add chocolate chips for eyes.
