  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 cup whole milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract

For the frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup mini chocolate chips (for eyes)
  • Edible glitter (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. Cream the softened butter and sugar in a large mixing bowl until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
  5. Fill the cupcake liners about two-thirds full with the batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting, beat the softened butter until creamy, then gradually add powdered sugar, mixing on low speed. Add heavy cream and vanilla extract, then beat on high speed until light and fluffy.
  8. Once the cupcakes are cool, frost them with the prepared frosting and decorate with mini chocolate chips for eyes and edible glitter.
