Description

The German Bee Sting Cake, known as Bienenstich, is a delightful dessert featuring a soft, yeast-based cake topped with a crunchy almond and honey mixture, filled with rich vanilla pudding.


Ingredients

  • 500 grams all-purpose flour
  • 250 ml milk, lukewarm
  • 100 grams unsalted butter, melted
  • 100 grams sugar
  • 2 large eggs
  • 1 packet (7 grams) active dry yeast
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

For the Topping:

  • 100 grams sliced almonds
  • 100 grams honey
  • 50 grams unsalted butter
  • 50 grams sugar
  • 100 ml heavy cream

For the Filling:

  • 1 packet (40 grams) vanilla pudding mix
  • 500 ml milk
  • 50 grams sugar
  • 200 ml heavy cream, whipped

Instructions

  1. Mix lukewarm milk with active dry yeast and let it sit for 5-10 minutes.
  2. In a large bowl, combine flour, sugar, melted butter, eggs, vanilla extract, and salt. Add the yeast mixture and stir until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Prepare the cream filling by cooking vanilla pudding mix, sugar, and milk over medium heat until thickened. Let it cool and fold in whipped cream.
  5. For the topping, melt unsalted butter, honey, and sugar in a saucepan, then add sliced almonds and mix well.
  6. After the dough has risen, punch it down and transfer it to a greased round cake pan. Let it rise again for 30 minutes.
  7. Pour the almond topping over the dough and spread evenly.
  8. Preheat the oven to 180°C (350°F) and bake the cake for 25-30 minutes until golden brown.
  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Once cooled, fill the cake with the prepared cream filling.
