- 3 tablespoons olive oil – Helps to keep the chicken moist and adds richness.
- 2 tablespoons honey – Balances the tanginess of the mustard with a touch of sweetness.

Instructions
- Rinse the chicken thighs under cold water and pat them dry with paper towels.
- Place the chicken in a large bowl or resealable plastic bag for marinating.
- Trim the ends of the Brussels sprouts and cut them in half, then toss with olive oil, salt, and pepper.
- In a small bowl, combine Dijon mustard, minced garlic, olive oil, honey, salt, pepper, and thyme to make the Garlic Dijon sauce.
- Preheat the oven to 200°C (400°F) and arrange the marinated chicken thighs in a baking dish with Brussels sprouts around them.
- Bake for 35-40 minutes, brushing with remaining sauce in the last 5 minutes, until chicken reaches an internal temperature of 75°C (165°F).
- Let the dish rest for a few minutes before serving.
