- 2 chicken breasts (about 1 lb), cut into bite-sized pieces
- 4 cloves garlic, minced
- 4 tablespoons butter
- 2 tablespoons olive oil
- 1/4 cup fresh parsley, chopped
- 1 cup heavy cream
- 1 cup parmesan cheese, grated
- 8 oz fettuccine pasta
- Salt and black pepper, to taste
Instructions
- Cut the chicken breasts into bite-sized pieces and season with salt and black pepper.
- In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat. Add the chicken and cook for 5-7 minutes until golden brown. Remove and set aside.
- In the same skillet, reduce heat to medium, add the remaining butter, and sauté the minced garlic for about 1 minute.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the grated parmesan cheese until melted and smooth.
- Add the cooked fettuccine and chicken back into the skillet, tossing to coat in the sauce. Adjust seasoning with salt and pepper as needed.
- Remove from heat and stir in the chopped parsley before serving.
