Funeral potatoes are a creamy, cheesy potato casserole that is a beloved comfort food in the United States, often served at gatherings and potlucks.

Ingredients

Scale
  • 1 package (30 oz) frozen shredded hash browns, thawed
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups cheddar cheese, shredded
  • 1/2 cup butter, melted
  • 2 cups cornflakes, crushed
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the thawed shredded hash browns, sour cream, and cream of chicken soup. Add 1 1/2 cups of shredded cheddar cheese, melted butter, and chopped green onions. Season with salt and pepper to taste and mix well.
  3. Ensure the hash browns are evenly coated with the creamy mixture.
  4. Grease a 9×13-inch (23×33 cm) baking dish with butter or cooking spray. Pour the potato mixture into the dish and spread it out evenly.
