Description

  • 1 teaspoon pure vanilla extract
  • 8 ounces full-fat brick cream cheese (softened)
  • 3 Tablespoons unsalted butter (softened)
  • 1 and 1/4 cups confectioners’ sugar
  • 3 cups assorted sliced fresh fruit (e.g., strawberries, blueberries, kiwi, peaches)

Instructions

  1. In a medium bowl, whisk together flour, cornstarch, baking powder, and salt.
  2. In a separate bowl, beat softened butter and granulated sugar until creamy. Add the egg and vanilla extract and mix until fully combined.
  3. Gradually add dry ingredients to the wet mixture and mix until a dough forms. Cover and refrigerate for 20 minutes.
  4. Preheat oven to 350°F (175°C). Grease a 12-inch pizza pan or line with parchment paper.
  5. Press chilled dough into the pan to form a 9–10 inch circle. Bake for 17–19 minutes until edges are lightly golden. Cool completely in the pan.
  6. While the crust cools, beat softened cream cheese and 3 tablespoons of butter until smooth. Gradually add confectioners’ sugar and vanilla extract and beat until fluffy.
  7. Spread frosting evenly over the cooled crust. Top with sliced fresh fruit, arranging as desired.
  8. Chill briefly before slicing into wedges. Serve and enjoy!
