- 3/4 cup granulated sugar

- 1 teaspoon pure vanilla extract
- 8 ounces full-fat brick cream cheese (softened)
- 3 Tablespoons unsalted butter (softened)
- 1 and 1/4 cups confectioners’ sugar
- 3 cups assorted sliced fresh fruit (e.g., strawberries, blueberries, kiwi, peaches)
Instructions
- In a medium bowl, whisk together flour, cornstarch, baking powder, and salt.
- In a separate bowl, beat softened butter and granulated sugar until creamy. Add the egg and vanilla extract and mix until fully combined.
- Gradually add dry ingredients to the wet mixture and mix until a dough forms. Cover and refrigerate for 20 minutes.
- Preheat oven to 350°F (175°C). Grease a 12-inch pizza pan or line with parchment paper.
- Press chilled dough into the pan to form a 9–10 inch circle. Bake for 17–19 minutes until edges are lightly golden. Cool completely in the pan.
- While the crust cools, beat softened cream cheese and 3 tablespoons of butter until smooth. Gradually add confectioners’ sugar and vanilla extract and beat until fluffy.
- Spread frosting evenly over the cooled crust. Top with sliced fresh fruit, arranging as desired.
- Chill briefly before slicing into wedges. Serve and enjoy!
