Description
Frozen custard is a rich, creamy dessert made with egg yolks, milk, cream, and sugar, offering a denser and silkier texture than ice cream.
Ingredients
Scale
- 2 cups whole milk
- 1/2 cup heavy cream
- 2 teaspoons pure vanilla extract
- 6 large egg yolks
- 3/4 cup (150 g) granulated sugar
Instructions
- Pour milk, heavy cream, and vanilla extract into a saucepan and warm to 160°F; then remove from heat and cool slightly.
- Whisk egg yolks and sugar in a bowl until pale yellow and ribbony.
- Gradually whisk warm milk mixture into egg yolks, then return to saucepan over medium-low heat.
- Stir constantly until mixture thickens and coats the back of a spatula, reaching 170-175°F.
- Pour custard into a loaf pan and cool at room temperature for 30 minutes.
- Freeze custard, whisking every 30-40 minutes for 3-4 times over 5-6 hours until nearly frozen.
Notes
- Monitor temperature carefully to avoid curdling the eggs.
- Whisk constantly when combining hot milk with eggs.
- Whisk during freezing to prevent ice crystals and ensure creamy texture.
- Use fresh eggs for better flavor and creaminess.
