Description

Frozen custard is a rich, creamy dessert made with egg yolks, milk, cream, and sugar, offering a denser and silkier texture than ice cream.


Ingredients

  • 6 large egg yolks
  • 3/4 cup (150 g) granulated sugar

Instructions

  1. Pour milk, heavy cream, and vanilla extract into a saucepan and warm to 160°F; then remove from heat and cool slightly.
  2. Whisk egg yolks and sugar in a bowl until pale yellow and ribbony.
  3. Gradually whisk warm milk mixture into egg yolks, then return to saucepan over medium-low heat.
  4. Stir constantly until mixture thickens and coats the back of a spatula, reaching 170-175°F.
  5. Pour custard into a loaf pan and cool at room temperature for 30 minutes.
  6. Freeze custard, whisking every 30-40 minutes for 3-4 times over 5-6 hours until nearly frozen.
