- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup powdered sugar
- 1/4 tsp salt
- 1 large egg yolk
- 2–3 tablespoons cold water
- 1 cup heavy cream
- 1/2 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups fresh raspberries
Instructions
- Mix flour, powdered sugar, and salt. Add chilled butter and mix until coarse crumbs. Add egg yolk and cold water, mix until dough forms. Chill for 30-60 minutes.
- Preheat oven to 375°F (190°C). Roll dough to 1/8 inch thick and press into tart pan. Prick with a fork, line with parchment paper and weights, and bake for 15-20 minutes until golden. Remove weights and bake for 5 more minutes. Let cool.
- Whisk together heavy cream, sugar, eggs, and vanilla. Pour into cooled crust, filling to the top.
- Arrange fresh raspberries on top of the filling. Bake for 25-30 minutes until filling is set and slightly jiggly. Cool completely on a wire rack before serving.

- Chill the dough for a flaky crust.

- Cool the crust completely before adding the filling to prevent sogginess.
