Description

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup powdered sugar
  • 1/4 tsp salt
  • 1 large egg yolk
  • 23 tablespoons cold water
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh raspberries

Instructions

  1. Mix flour, powdered sugar, and salt. Add chilled butter and mix until coarse crumbs. Add egg yolk and cold water, mix until dough forms. Chill for 30-60 minutes.
  2. Preheat oven to 375°F (190°C). Roll dough to 1/8 inch thick and press into tart pan. Prick with a fork, line with parchment paper and weights, and bake for 15-20 minutes until golden. Remove weights and bake for 5 more minutes. Let cool.
  3. Whisk together heavy cream, sugar, eggs, and vanilla. Pour into cooled crust, filling to the top.
  4. Arrange fresh raspberries on top of the filling. Bake for 25-30 minutes until filling is set and slightly jiggly. Cool completely on a wire rack before serving.
