  • ¼ cup sugar
  • 1 egg yolk
  • 2 to 4 tablespoons cold water
  • 4 medium apples, peeled, cored, and thinly sliced (such as Granny Smith or Fuji)
  • 2 tablespoons sugar (for the apples)
  • 1 teaspoon cinnamon (optional)
  • 1 tablespoon lemon juice
  • ½ cup apricot jam (for glazing)

Instructions

  1. Make the tart crust by combining flour, sugar, and cold butter. Add egg yolk and cold water, mixing until dough forms. Chill for 30 minutes.
  2. Prepare the apples by peeling, coring, and slicing them thinly. Toss with lemon juice, sugar, and cinnamon, and let sit for 15 minutes.
  3. Roll out the chilled dough and fit it into a tart pan. Chill again before pricking the bottom and baking at 375°F (190°C) for 15-20 minutes.
  4. Assemble the tart by layering the apple slices on the crust in a circular pattern. Bake for 35-40 minutes until golden. Glaze with warm apricot jam.
