- 3 large apples (Granny Smith or Golden Delicious), peeled, cored, and chopped
- 1 1/4 cups (160g) all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 3 large eggs
- 3/4 cup (150g) granulated sugar
- 1 tsp vanilla extract
- 1/2 cup (120ml) whole milk
- 2 tbsp dark rum
- 100g unsalted butter, melted and slightly cooled
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch (23cm) springform or round cake pan.
- Whisk together flour, baking powder, and salt in a medium bowl; set aside.
- In a large bowl, beat eggs and sugar until pale and thickened, about 3-4 minutes.
- Add vanilla extract, milk, and dark rum to the egg mixture and whisk until combined.
- Gradually fold in the dry ingredients using a spatula until just incorporated.
- Stir in melted butter until smooth, then gently fold in the chopped apples evenly.
- Pour batter into prepared pan and smooth the top.
- Bake for 45-50 minutes until a toothpick inserted in the center comes out clean and the top is golden brown.
- Cool in the pan for 10-15 minutes, then remove from pan and cool completely on a wire rack.
- Optionally dust with powdered sugar before serving.

- Use firm, tart apples like Granny Smith for best texture and flavor.
- Do not overmix the batter to avoid a dense cake.
- Peeling apples too thinly can cause them to dissolve during baking.
