- 3/4 cup (150g) granulated sugar
- 1/2 cup (120g) unsalted butter, softened
- 4 large eggs, room temperature

- Zest of 1 lemon (optional)
- Pinch of salt
- Powdered sugar, for dusting
- Chopped pistachios or edible rose petals for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Add eggs one at a time, beating well after each addition.
- Stir in ground cardamom, vanilla extract, lemon zest (if using), and a pinch of salt until evenly combined.
- Gently fold in the almond flour, taking care not to overmix to preserve airiness.
- Pour batter into prepared pan and smooth the top.
- Bake for 30-35 minutes until the top is golden and a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar and garnish with chopped pistachios or edible rose petals if desired before serving.
