Description

A moist, flourless orange and cardamom almond cake made with whole oranges, ground almonds, and warm spices. Naturally gluten-free and bursting with citrus flavor, topped with a fragrant orange glaze and pistachios for a beautiful finish.

  • 2 large oranges (preferably organic, unpeeled)
  • 1 ½ cups ground almonds (almond flour)
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon baking powder
  • ½ teaspoon ground cardamom
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • For the Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons orange juice
  • ½ teaspoon ground cardamom
  • 1 tablespoon chopped pistachios (optional, for garnish)

Instructions

  1. Place whole oranges in a pot, cover with water, bring to a boil, then simmer for 1 hour until soft. Drain and let cool.
  2. Preheat oven to 350°F (175°C). Grease and line a 9-inch cake pan with parchment paper.
  3. Quarter the cooled oranges, remove seeds, and blend into a smooth puree.
  4. In a bowl, beat eggs and sugar until light and fluffy (3–5 minutes). Stir in the orange puree.
  5. Add ground almonds, baking powder, cardamom, cinnamon, and salt. Mix gently until combined.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 45–50 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. To make the glaze, whisk powdered sugar, orange juice, and cardamom until smooth.
  10. Drizzle glaze over cooled cake and sprinkle with chopped pistachios if using.
