Description
A moist, flourless orange and cardamom almond cake made with whole oranges, ground almonds, and warm spices. Naturally gluten-free and bursting with citrus flavor, topped with a fragrant orange glaze and pistachios for a beautiful finish.

- 2 large oranges (preferably organic, unpeeled)
- 1 ½ cups ground almonds (almond flour)
- 1 cup granulated sugar
- 4 large eggs
- 1 teaspoon baking powder
- ½ teaspoon ground cardamom
- ½ teaspoon ground cinnamon
- ½ teaspoon salt
- For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons orange juice
- ½ teaspoon ground cardamom
- 1 tablespoon chopped pistachios (optional, for garnish)
Instructions
- Place whole oranges in a pot, cover with water, bring to a boil, then simmer for 1 hour until soft. Drain and let cool.
- Preheat oven to 350°F (175°C). Grease and line a 9-inch cake pan with parchment paper.
- Quarter the cooled oranges, remove seeds, and blend into a smooth puree.
- In a bowl, beat eggs and sugar until light and fluffy (3–5 minutes). Stir in the orange puree.
- Add ground almonds, baking powder, cardamom, cinnamon, and salt. Mix gently until combined.
- Pour batter into prepared pan and smooth the top.
- Bake for 45–50 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- To make the glaze, whisk powdered sugar, orange juice, and cardamom until smooth.
- Drizzle glaze over cooled cake and sprinkle with chopped pistachios if using.

- Use organic oranges to avoid bitterness from the peel.
- Substitute sugar with coconut sugar or honey for a different sweetness.
- Use flaxseed meal as an egg replacement for a vegan version.
- Let cake rest for a few hours after baking for enhanced flavor.
