Chewy, flourless monster cookies made with oats, peanut butter, chocolate chips, and M&Ms—gluten-free, fun, and easy to bake!

- 1 and 1/2 cups old-fashioned whole rolled oats
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 3 tablespoons unsalted butter, melted
- 2/3 cup packed light or dark brown sugar
- 2 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1 cup creamy peanut butter
- 1/2 cup regular-size M&Ms or 1/3 cup mini M&Ms
- 1/3 cup semi-sweet chocolate chips
Instructions
- In a medium bowl, whisk together oats, baking soda, and salt. Set aside.
- In a large bowl, whisk melted butter and brown sugar until smooth. Add eggs and mix well. Stir in vanilla and peanut butter until fully combined.
- Pour dry ingredients into the wet mixture and stir with a spatula until well incorporated.
- Gently fold in M&Ms and chocolate chips.
- Cover the dough and chill in the refrigerator for at least 30 minutes.
- Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
- Scoop dough into mounds about 3 inches apart on the baking sheets.
- Bake for 12–15 minutes until edges are golden and set.
- Cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Use crunchy peanut butter for added texture.
- For nut-free version, use sunflower seed butter.
- Chill the dough to help cookies hold shape.
- Customize with dried fruit, coconut, or other chocolate chips.
- Store in airtight container for up to 1 week or freeze for longer storage.
