Instructions

  1. Whisk together flour, baking powder, and salt in a bowl; set aside.
  2. Beat softened butter and granulated sugar until smooth and creamy.
  3. Add egg, vanilla extract, lemon extract, and optional lemon zest; beat until combined.
  4. Gradually mix dry ingredients into wet until dough forms; add extra flour if needed.
  5. Divide dough in half; roll each to 1/4 inch thickness with flour-dusted surface.
  6. Stack dough halves with parchment paper between and refrigerate for 1-2 hours.
  7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Cut dough into shapes using cookie cutters and place on baking sheets.
  9. Bake for 11-12 minutes until edges are lightly golden; cool on wire racks.
  10. Mix confectioners’ sugar, meringue powder, and water; beat until icing thickens.
  11. Divide icing into bowls, add gel coloring, and fill piping bags.
  12. Decorate cooled cookies with icing and sprinkles; let icing set for 2 hours.
