Description

This Fig and Almond Cake is a moist, flavorful dessert made with dried figs and ground almonds, topped with a luscious honey glaze. It’s the perfect balance of sweetness and richness, making it an ideal treat for any occasion. Ingredients

  • Dried figs: 200g (about 1 1/3 cups, chopped)
  • Ground almonds: 150g (about 1 1/2 cups)
  • Sugar: 200g (1 cup)
  • Eggs: 3 large
  • Vegetable oil: 120ml (1/2 cup)
  • Milk: 100ml (1/2 cup)
  • Baking powder: 1 teaspoon
  • Salt: 1/4 teaspoon
  • Ground cinnamon: 1 teaspoon
  • Vanilla extract: 1 teaspoon

For the Honey Glaze:

 

  • Honey: 100g (about 1/3 cup)
  • Water: 2 tablespoons
  • Lemon juice: 1 tablespoon

Instructions

  • Preheat the oven to 180°C (350°F). Grease and flour a 23 cm (9-inch) round cake pan.
  • In a large bowl, whisk together the eggs, sugar, vegetable oil, milk, and vanilla extract until smooth.
  • In another bowl, combine the ground almonds, chopped figs, baking powder, salt, and cinnamon.
  • Gradually fold the dry ingredients into the wet mixture until fully combined.
  • Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • While the cake is cooling, prepare the honey glaze by heating the honey, water, and lemon juice in a small saucepan. Simmer for 5-7 minutes, then remove from heat and set aside.

 

  • Once the cake has cooled, drizzle the honey glaze over the top and serve.

Notes

  • If you prefer a more intense fig flavor, use dried figs. You can soak them in warm water for about 10 minutes to soften them.
