Ingredients
- Dried figs: 200g (about 1 1/3 cups, chopped)
- Ground almonds: 150g (about 1 1/2 cups)
- Sugar: 200g (1 cup)
- Eggs: 3 large
- Vegetable oil: 120ml (1/2 cup)
- Milk: 100ml (1/2 cup)
- Baking powder: 1 teaspoon
- Salt: 1/4 teaspoon
- Ground cinnamon: 1 teaspoon
- Vanilla extract: 1 teaspoon
For the Honey Glaze:
- Honey: 100g (about 1/3 cup)
- Water: 2 tablespoons
- Lemon juice: 1 tablespoon
Instructions
- Preheat the oven to 180°C (350°F). Grease and flour a 23 cm (9-inch) round cake pan.
- In a large bowl, whisk together the eggs, sugar, vegetable oil, milk, and vanilla extract until smooth.
- In another bowl, combine the ground almonds, chopped figs, baking powder, salt, and cinnamon.
- Gradually fold the dry ingredients into the wet mixture until fully combined.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- While the cake is cooling, prepare the honey glaze by heating the honey, water, and lemon juice in a small saucepan. Simmer for 5-7 minutes, then remove from heat and set aside.
- Once the cake has cooled, drizzle the honey glaze over the top and serve.
Notes
- If you prefer a more intense fig flavor, use dried figs. You can soak them in warm water for about 10 minutes to soften them.
- Feel free to swap ground almonds with other nut flours, like hazelnut or pistachio, for a fun twist on this recipe.
