- 3/4 cup unsalted butter (at room temperature)
- 5 teaspoons espresso powder (for the cake)

- 4 large egg whites
- 1/2 cup sour cream
- 2 teaspoons pure vanilla extract
- 2/3 cup whole milk
- 1/3 cup brewed strong black coffee
- 1 and 1/4 cups mini chocolate chips
- 1 and 1/4 cups unsalted butter (for buttercream, at room temperature)
- 2 and 1/2 teaspoons espresso powder (for the buttercream)
- 5 cups sifted confectioners’ sugar
- 1/3 cup heavy cream or whole milk
- 2 teaspoons pure vanilla extract (for buttercream)
- 1/8 teaspoon salt (for buttercream)
- Optional: chocolate covered espresso beans for garnish
Instructions
- Preheat oven to 350°F (175°C) and prepare three 8-inch cake pans with butter and parchment paper.
- Whisk together cake flour, baking powder, baking soda, and salt in a bowl.
- Cream the butter, sugar, and espresso powder until light and fluffy, then add egg whites, sour cream, and vanilla extract.
- Gradually mix in the dry ingredients, alternating with the milk and brewed coffee. Fold in the mini chocolate chips.
- Pour batter into prepared pans and bake for 25-28 minutes until a toothpick comes out clean. Let cool in pans for 30 minutes.
- Beat butter with espresso powder for the buttercream; gradually add confectioners’ sugar, cream or milk, vanilla extract, and salt until creamy.
- Assemble the cake by frosting between layers and covering the outside. Optionally, decorate with chocolate-covered espresso beans.
- Chill to set the frosting, slice, and serve.
Notes
For variations, consider using different types of chocolate or flavors. Can be made gluten-free or vegan with substitutions.
