- Bell peppers: 1 medium, finely chopped (any color)
- Cumin: 1 teaspoon (2 g)
- Paprika: 1 teaspoon (2 g)
- Olives: 1/4 cup (40 g), chopped (green or black)
- Hard-boiled eggs: 2, chopped
- Egg wash: 1 egg beaten with 1 tablespoon water
Instructions
- Prepare the dough by mixing flour and salt, then adding cold butter until crumbly. Gradually add ice-cold water and refrigerate for at least 30 minutes.
- Make the filling by sautéing onions and bell peppers, then adding ground beef and cooking until browned. Stir in spices, olives, and hard-boiled eggs, then let cool.
- Roll out the chilled dough and cut into circles. Place a tablespoon of filling in the center, fold, and seal the edges.
- Preheat the oven to 400°F (200°C), brush empanadas with egg wash, and bake for 20-25 minutes until golden brown.
