Ingredients
Scale
- 1 kg (2.2 lbs) beef chuck: Cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 large onions: Finely chopped
- 4 cloves garlic: Minced
- 4 medium tomatoes: Chopped
- 2 bell peppers: Diced (red or green)
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 2 teaspoons paprika
- 1/2 teaspoon ground cinnamon
- Salt and pepper: To taste
- 500 ml (2 cups) beef broth or water
- Fresh herbs: Such as parsley or cilantro for garnish
Instructions
- Prepare all ingredients by chopping onions, garlic, tomatoes, and bell peppers, and cutting the beef into 1-inch cubes.
- In a large pot, heat olive oil over medium-high heat and brown the beef cubes in batches for 5-7 minutes.
- Remove the beef and sauté the chopped onions in the same pot until translucent, about 5 minutes, then add minced garlic and cook for an additional minute.
- Add chopped tomatoes and diced bell peppers, cooking for about 5 minutes until softened, then stir in spices and toast for 1-2 minutes.
- Return the beef to the pot, add broth or water, season with salt and pepper, bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Adjust seasoning, thicken sauce if necessary, and serve hot garnished with fresh herbs.
Notes
- Choose beef chuck for tenderness; avoid lean cuts.
- Experiment with spices for personal taste.
- Longer simmering results in more tender beef.
