- 1 cup graham cracker crumbs
- 3 tablespoons melted butter
- 2 tablespoons white sugar
- 3 (8-ounce) packages cream cheese, softened
- 1 cup white sugar
- 3/4 cup eggnog
- 3 tablespoons all-purpose flour
- 2 large eggs
- 2 tablespoons rum
- 1 pinch ground nutmeg
Instructions
- Preheat oven to 325°F (165°C). Combine graham cracker crumbs, melted butter, and sugar, then press into the bottom of a 9-inch springform pan. Bake for 10 minutes. Set aside to cool.
- Increase oven temperature to 425°F (220°C). In a food processor, blend cream cheese, sugar, eggnog, and flour until smooth.
- Add eggs, rum, and nutmeg, blending until just combined.
- Pour the mixture into the cooled crust and bake at 425°F (220°C) for 10 minutes. Then, reduce heat to 250°F (120°C) and bake for an additional 45 minutes until the center is slightly jiggly.
- Loosen the sides of the pan and allow the cheesecake to cool completely. Once cooled, remove the rim of the springform pan.
Notes
- Chill the cheesecake for at least 4 hours or overnight to allow the flavors to develop.
- Top with whipped cream and a dusting of ground nutmeg for a festive touch.
- Be careful not to overmix the batter to avoid cracks in the cheesecake.
