Ingredients

  • Cooked Jasmine Rice: 2 cups of day-old jasmine rice
  • Eggs: 2 large eggs
  • Green Peas: 1 cup of fresh or frozen peas
  • Carrots: 1 cup of diced carrots
  • Green Onions: 3 chopped green onions
  • Soy Sauce: 3 tablespoons
  • Sesame Oil: 1 tablespoon
  • Black Pepper: 1/2 teaspoon
  • Vegetable Oil: 2 tablespoons

Instructions

  1. Prepare the rice by cooking 2 cups of jasmine rice and letting it cool completely.
  2. In a skillet, heat 1 tablespoon of vegetable oil and scramble the 2 eggs until fully cooked.
  3. Add the remaining tablespoon of vegetable oil and stir-fry the diced carrots for 2-3 minutes, then add the green peas and cook for an additional 2 minutes.

  5. Add soy sauce, sesame oil, and black pepper, then mix in the scrambled eggs and chopped green onions, cooking for an additional 1-2 minutes until heated through.
