Instructions

  1. Select a ripe watermelon that feels heavy and has a smooth skin.
  2. Cut the watermelon into cubes, removing any seeds.
  3. Blend the watermelon cubes with sugar and lime juice until smooth.
  4. Taste the mixture and adjust sweetness if necessary.
  5. Pour the mixture into a shallow dish and freeze for about 2 hours.
  6. After 2 hours, scrape the mixture with a fork to create fluffy crystals and freeze for another hour.
  7. Scrape again before serving to maintain the light texture.
