Description

Easy snickerdoodle bars are a delightful twist on the classic snickerdoodle cookie, combining warm cinnamon-sugar flavor in a soft, chewy bar form.

Ingredients

  • All-purpose flour: 2 cups (240 grams)
  • Granulated sugar: 1 cup (200 grams)
  • Brown sugar: 1 cup (packed, 220 grams)
  • Unsalted butter: 1 cup (226 grams), softened
  • Eggs: 2 large
  • Vanilla extract: 2 teaspoons
  • Baking powder: 2 teaspoons
  • Ground cinnamon: 2 teaspoons (plus more for topping)
  • Salt: 1/2 teaspoon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking pan by greasing it or lining it with parchment paper.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt.
  4. Cream the softened butter with the granulated and brown sugars until light and fluffy.
  5. Add the eggs and vanilla extract, mixing well after each addition. Gradually add the dry ingredients to the wet mixture and mix on low speed until just combined.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Mix together 2 tablespoons of granulated sugar and 1 teaspoon of ground cinnamon for the topping, then sprinkle it over the batter.
  8. Bake for 20-25 minutes until the edges are golden brown and a toothpick inserted into the center comes out clean.
  9. Let the bars cool for 10-15 minutes, then transfer to a wire rack to cool completely before cutting into squares.

Notes

  • Use fresh ingredients for the best results.
  • Don’t overmix the batter to keep the bars soft and chewy.
  • Adjust baking time for desired texture: 20 minutes for chewy, 25 minutes for crispy.
