Ingredients

  • Fresh beets: 3 medium-sized
  • Potatoes: 2 medium-sized
  • Carrots: 2 medium-sized
  • Pickles: 1 cup, diced
  • Green peas: 1 cup (frozen or fresh)
  • Onion: 1 small, finely chopped
  • Mayonnaise: 1 cup
  • Salt: to taste

Instructions

  1. Wash the fresh beets thoroughly, place them in a pot of water, and boil for 30-40 minutes until fork-tender. Cool, peel, and dice.
  2. Wash and peel the potatoes, cut into cubes, and boil in salted water for 15-20 minutes until fork-tender. Drain and cool.
  3. Peel and cube the carrots, boil or steam until tender, then drain and cool.
  4. In a small bowl, mix 1 cup of mayonnaise until smooth. Optionally, add fresh dill or parsley.
  5. In a large bowl, combine diced beets, potatoes, carrots, pickles, green peas, and onion. Fold gently, then add the mayonnaise dressing and mix until well coated. Season with salt to taste.
  6. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
