- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers, diced
- 1 cup mozzarella cheese, shredded
- 1/2 cup black olives, sliced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
- Fluff quinoa with a fork and transfer to serving bowls.
- Top with cherry tomatoes, bell peppers, mozzarella cheese, and black olives.
- Sprinkle with Italian seasoning, salt, and pepper.
- Serve warm and enjoy.
