Description
An easy chicken marinade for Mexican dishes that transforms ordinary meals into extraordinary feasts with zesty lime, aromatic garlic, and a blend of spices.
Ingredients
Scale
- 1/4 cup olive oil
- 1/4 cup lime juice
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 to 2 pounds chicken (breasts, thighs, or drumsticks)
Instructions
- Gather your ingredients.
- Mix the marinade by combining olive oil and lime juice in a medium bowl, then whisk in garlic, cumin, chili powder, smoked paprika, salt, and black pepper.
- Marinate the chicken by placing it in a resealable bag or shallow dish, pouring the marinade over it, and ensuring it’s well coated.
- Cook the chicken by grilling or baking until the internal temperature reaches 165°F (75°C).
Notes
- For best flavor, marinate for at least 30 minutes, ideally 2 to 4 hours or overnight.
- Choose chicken cuts based on preference; thighs are juicier than breasts.
- Store leftover marinade in an airtight container for up to 3 days, but discard any that has been in contact with raw chicken.
