- 2 teaspoons baking powder

- ½ teaspoon salt
- 1 cup buttermilk (or milk of your choice)
- ½ cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups fresh or frozen blueberries
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with cooking spray.
- In a large bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Fold in the blueberries gently to distribute them throughout the batter.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. Optionally, sprinkle extra blueberries on top of each muffin.
- Bake for 18-22 minutes or until a toothpick comes out clean when inserted into the center of a muffin.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Avoid overmixing the batter to prevent dense muffins.
- For a vegan version, replace eggs with flax eggs and use plant-based milk.
- For extra flavor, add cinnamon or nutmeg to the dry ingredients.
- If using frozen blueberries, do not thaw them before adding to the batter to prevent them from bleeding into the muffins.
