Description

This Easy Berry Icebox Cake is a no-bake, layered dessert made with whipped cream, graham crackers, and fresh berries. Perfect for summer parties and gatherings, it’s light, refreshing, and simple to prepare.


Ingredients

  • 3 cups cold heavy cream
  • 1/3 cup confectioners sugar
  • 2 teaspoons pure vanilla extract or vanilla bean paste
  • 1/2 teaspoon pure almond extract
  • 2021 full sheet graham crackers
  • 2 cups sliced fresh strawberries
  • 1 cup fresh blueberries
  • Optional: Additional berries and star sprinkles for decoration

Instructions

  1. In a large mixing bowl, beat cold heavy cream with confectioners sugar, vanilla extract, and almond extract using an electric mixer until medium peaks form (about 4 minutes).
  2. Spread a thin layer of whipped cream on the bottom of a 9×13 inch pan to help anchor the graham crackers.
  3. Place 7 graham crackers in a single layer over the whipped cream, breaking as needed to fill gaps.
  4. Spread 2 cups of whipped cream over the graham crackers and top with sliced strawberries.
  5. Repeat the layers with more graham crackers, 2 more cups of whipped cream, and the blueberries.
  6. Add a final layer of graham crackers and spread the remaining whipped cream on top.
  7. Cover the pan with plastic wrap or foil and refrigerate for at least 3 hours or up to 48 hours.
  8. Before serving, decorate with additional berries or sprinkles if desired. Slice and serve chilled.
