Ingredients
- Chicken thighs: 4 pieces, bone-in and skin-on
- Honey: 1/4 cup (60 ml)
- Dijon mustard: 1/4 cup (60 ml)
- Garlic: 3 cloves, minced
- Olive oil: 2 tablespoons (30 ml)
- Salt: 1 teaspoon (5 g)
- Pepper: 1/2 teaspoon (2 g)
- Fresh thyme: 2 teaspoons, chopped (or 1 teaspoon dried thyme)
Instructions
- Preheat your oven to 425°F (220°C).
- In a medium bowl, combine the honey, Dijon mustard, minced garlic, olive oil, salt, pepper, and fresh thyme. Whisk until well blended.
- Place the chicken thighs in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
- Arrange the marinated chicken thighs skin-side up in a baking dish or on a lined baking sheet. Pour any remaining marinade over the chicken.
- Bake in the preheated oven for 35-45 minutes, until the skin is golden brown and the internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes before serving. Garnish with additional fresh thyme if desired.
