Description
Easter Egg Fruit Pizzas are a delightful twist on traditional fruit pizzas featuring a sweet sugar cookie base shaped like eggs, topped with creamy frosting and a colorful array of fresh fruits.
Ingredients
- Sugar cookie dough: 1 batch (approximately 16 oz, store-bought or homemade)
- Cream cheese: 8 oz, softened
- Powdered sugar: 1 cup
- Assorted fresh fruits: about 4 cups total, including:
- Strawberries: 1 cup, sliced
- Blueberries: 1 cup
- Kiwi: 2, peeled and sliced
- Mandarin oranges: 1 cup, segmented
- Shredded coconut: 1/2 cup (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Roll out the sugar cookie dough on a lightly floured surface to about 1/4 inch thickness. Cut out egg shapes using an egg-shaped cookie cutter and place them on a baking sheet lined with parchment paper.
- Bake the cookies for 8-10 minutes or until lightly golden around the edges. Let them cool completely on a wire rack.
- In a mixing bowl, combine softened cream cheese and powdered sugar. Beat until smooth and creamy. Optionally, mix in a splash of vanilla extract.
- Spread a generous layer of cream cheese frosting on each cooled cookie.
- Decorate the frosted cookies with assorted fresh fruits, arranging them as desired. Optionally, sprinkle shredded coconut on top.
- Refrigerate the decorated pizzas for about 30 minutes before serving.
Notes
- Use seasonal fruits for the best flavor.
- Store leftovers in an airtight container in the refrigerator.
- Consume within 2 days for optimal freshness.
- Consider gluten-free options for the cookie base if needed.
