Description

A unique twist on the classic French dessert, this Earl Grey Crème Brûlée combines rich custard with the aromatic flavors of Earl Grey tea, topped with a caramelized sugar crust.

Ingredients

Scale
  • 2 cups heavy cream (500 ml)
  • 1 tablespoon loose Earl Grey tea leaves (or 2 tea bags)
  • 5 large egg yolks
  • 1/2 cup granulated sugar (100 g)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Infuse the cream with Earl Grey tea by heating it in a saucepan until it simmers, then steep for 15 minutes.
  2. Whisk together egg yolks, sugar, vanilla extract, and salt until pale and thickened.
  3. Gradually combine the warm cream with the egg mixture while whisking, then strain through a sieve.
  4. Preheat the oven to 325°F (160°C) and prepare ramekins in a baking dish with a water bath.
  5. Pour the custard mixture into ramekins and bake for 30-35 minutes until edges are set and centers jiggle slightly.
  6. Cool the ramekins in the water bath for 10 minutes, then refrigerate for at least 2 hours.
  7. Sprinkle sugar on top of each custard and caramelize using a kitchen torch or broiler.

Notes

  • Choose high-quality Earl Grey tea for the best flavor.
  • Avoid overbaking to maintain a smooth texture.
  • Use a kitchen torch for precise caramelization.
  • Consider adding lavender or citrus zest for additional flavor variations.
  • For a dairy-free option, substitute heavy cream with coconut cream or almond milk.
