- 1 tablespoon loose Earl Grey tea leaves (or 2 tea bags)
- 5 large egg yolks
- 1/2 cup granulated sugar (100 g)
- 1 teaspoon vanilla extract

Instructions
- Infuse the cream with Earl Grey tea by heating it in a saucepan until it simmers, then steep for 15 minutes.
- Whisk together egg yolks, sugar, vanilla extract, and salt until pale and thickened.
- Gradually combine the warm cream with the egg mixture while whisking, then strain through a sieve.
- Preheat the oven to 325°F (160°C) and prepare ramekins in a baking dish with a water bath.
- Pour the custard mixture into ramekins and bake for 30-35 minutes until edges are set and centers jiggle slightly.
- Cool the ramekins in the water bath for 10 minutes, then refrigerate for at least 2 hours.
- Sprinkle sugar on top of each custard and caramelize using a kitchen torch or broiler.
