- 1/2 cup almond paste
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- 1 tablespoon Earl Grey tea leaves
- 1 egg
- 1 tablespoon milk
- Powdered sugar for dusting
- Optional: 1/4 cup sliced almonds
Instructions
- Roll out the thawed puff pastry into a rectangle, about 1/8 inch thick.
- Infuse the Earl Grey flavor by steeping tea leaves in softened butter, then strain.
- In a bowl, mix almond paste, sugar, butter, vanilla extract, and infused Earl Grey butter until smooth.
- Shape the croissants by placing filling on the wide end of pastry triangles and rolling them up.
- Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- Brush croissants with egg wash and sprinkle with sliced almonds if desired.
- Bake for 15-20 minutes until golden brown and flaky.
Notes
- Use cold puff pastry for best results.
- Do not overfill the croissants to prevent bursting.
