- 150g (1 ¼ cups) all-purpose flour
- 60g (½ cup) almond flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
- ¼ tsp salt
- 100g (½ cup) brown sugar
- 2 large eggs
- 80 ml (1/3 cup) vegetable oil
- 120g (½ cup) plain yogurt or sour cream
- 1 tsp vanilla extract
- Zest of 1 orange (optional)
- 2 tbsp sliced almonds (for topping, optional)
Instructions
- Preheat the oven to 175°C (350°F). Grease and line a 20 cm (8-inch) round cake pan or loaf tin.
- In a bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, speculaas spices, and salt.
- In another bowl, beat the brown sugar and eggs until light and fluffy. Add the vegetable oil, yogurt, vanilla extract, and orange zest (if using), and mix until smooth.
- Gradually fold the dry ingredients into the wet ingredients, mixing until just combined.
- Pour the batter into the prepared pan and sprinkle with sliced almonds if desired.
- Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
- Let cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
- Serve as-is or dust with powdered sugar for a simple finish.
Notes
- If you prefer a more intense spice flavor, feel free to add extra cinnamon or ginger to the batter.
- To make this cake gluten-free, replace the all-purpose flour with a gluten-free flour blend and ensure your baking powder is also gluten-free.
- If you don’t have almond flour, you can use hazelnut flour for a different nutty flavor.
