Description
Double chocolate muffins are a decadent treat made with rich cocoa powder and chocolate chips. Perfect for breakfast, snack, or dessert.
Ingredients
Scale
- 1 cup (120g) all-purpose flour
- 1/2 cup (50g) unsweetened cocoa powder
- 1 cup (200g) granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup (120ml) buttermilk (or milk)
- 1/3 cup (80ml) vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1 cup (175g) semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and prepare the muffin tin by greasing or lining it with paper muffin cups.
- Sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large mixing bowl.
- In another bowl, whisk buttermilk, vegetable oil, egg, and vanilla extract until combined.
- Make a well in the dry ingredients and pour in the wet mixture. Stir gently until just combined. Add chocolate chips and fold them in, reserving some for topping.
- Spoon the batter into the muffin tin, filling each cup about 3/4 full. Sprinkle reserved chocolate chips on top.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Do not overmix the batter to avoid dense muffins.
- Ensure your ingredients are at room temperature for better results.
- If you’re using cocoa powder, Dutch-process cocoa can give a richer flavor.
