Description
Double Chocolate Banana Muffins combine ripe bananas with rich cocoa and chocolate chips for a soft, moist treat. Perfect for breakfast, snacks, or dessert.
Ingredients
Scale
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1/2 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- A pinch of salt
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 cup chocolate chips (semisweet or dark)
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin or line with muffin liners.
- In a large bowl, mash the ripe bananas and mix with melted butter.
- Add sugar, egg, and vanilla extract to the banana mixture and stir until smooth.
- In a separate bowl, whisk together baking soda, flour, cocoa powder, and salt. Add this dry mixture to the wet ingredients and fold until just combined.
- Gently fold in the chocolate chips.
- Fill the muffin tin with batter, about 2/3 full. Optionally, add extra chocolate chips on top.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Don’t overmix the batter, or the muffins will be dense.
- For a dairy-free option, replace butter with coconut oil or vegetable oil.
- Use very ripe bananas for the best sweetness and flavor.
