- 1 ¾ cups (220g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp salt
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) brown sugar
- 2 large eggs
- 1 cup (200g) cooked and mashed sweet potato
- 1 cup (160g) chopped dates
- ½ cup (120ml) milk
- 1 tsp vanilla extract
For the Orange Ginger Glaze:
- ½ cup (60g) powdered sugar
- 2 tbsp fresh orange juice
- 1 tsp finely grated fresh ginger
Instructions
- Prepare the sweet potatoes by cooking them until tender, then mash until smooth.
- Mix the dry ingredients in a medium bowl: flour, baking powder, baking soda, cinnamon, ginger, and salt.
- Cream the butter and brown sugar in a large bowl until light and fluffy, then add eggs one at a time, mixing well.
- Stir in the mashed sweet potato, chopped dates, milk, and vanilla extract until combined.
- Fold the dry ingredients into the wet ingredients until just combined.
- Preheat the oven to 350°F (175°C) and pour the batter into a prepared loaf pan. Bake for 50 to 60 minutes.
- While the loaf is baking, prepare the glaze by whisking together powdered sugar, orange juice, and ginger until smooth.
- Once baked, cool the loaf in the pan for 10 minutes, then remove and drizzle with glaze before cooling completely.
