Description

A delicious and moist loaf made with sweet potatoes and dates, topped with a refreshing orange ginger glaze.


Ingredients

  • 1 ¾ cups (220g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) brown sugar
  • 2 large eggs
  • 1 cup (200g) cooked and mashed sweet potato
  • 1 cup (160g) chopped dates
  • ½ cup (120ml) milk
  • 1 tsp vanilla extract

For the Orange Ginger Glaze:

  • ½ cup (60g) powdered sugar
  • 2 tbsp fresh orange juice
  • 1 tsp finely grated fresh ginger

Instructions

  1. Prepare the sweet potatoes by cooking them until tender, then mash until smooth.
  2. Mix the dry ingredients in a medium bowl: flour, baking powder, baking soda, cinnamon, ginger, and salt.
  3. Cream the butter and brown sugar in a large bowl until light and fluffy, then add eggs one at a time, mixing well.
  4. Stir in the mashed sweet potato, chopped dates, milk, and vanilla extract until combined.
  5. Fold the dry ingredients into the wet ingredients until just combined.
  6. Preheat the oven to 350°F (175°C) and pour the batter into a prepared loaf pan. Bake for 50 to 60 minutes.
  7. While the loaf is baking, prepare the glaze by whisking together powdered sugar, orange juice, and ginger until smooth.
  8. Once baked, cool the loaf in the pan for 10 minutes, then remove and drizzle with glaze before cooling completely.
