- 3/4 cup (150g) brown sugar, packed
- 2 large eggs, room temperature

- 1/2 cup (120ml) milk
- 1 cup (150g) chopped pitted dates
- 1 1/2 cups (150g) grated zucchini
- 1/4 cup (60ml) boiling water
- 1/2 cup (120ml) water
- 1/2 cup (100g) brown sugar
- 2 tbsp fresh grated ginger
- 1 tbsp unsalted butter
Instructions
- Prepare the ingredients by grating the zucchini and chopping the dates.
- Mix the dry ingredients in a medium bowl.
- Cream the butter and brown sugar, then add eggs, vanilla, and milk.
- Fold in the dry ingredients with the wet ingredients, then add zucchini and dates.
- Pour the batter into a loaf pan and bake for 55 to 65 minutes.
- Prepare the ginger sauce while the loaf cools.
