  • 3/4 cup (150g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup (120ml) milk
  • 1 cup (150g) chopped pitted dates
  • 1 1/2 cups (150g) grated zucchini
  • 1/4 cup (60ml) boiling water
  • 1/2 cup (120ml) water
  • 1/2 cup (100g) brown sugar
  • 2 tbsp fresh grated ginger
  • 1 tbsp unsalted butter

Instructions

  1. Prepare the ingredients by grating the zucchini and chopping the dates.
  2. Mix the dry ingredients in a medium bowl.
  3. Cream the butter and brown sugar, then add eggs, vanilla, and milk.
  4. Fold in the dry ingredients with the wet ingredients, then add zucchini and dates.
  5. Pour the batter into a loaf pan and bake for 55 to 65 minutes.
  6. Prepare the ginger sauce while the loaf cools.
