  • 1 tsp baking soda
  • 1 tsp baking powder

  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup (100g) shredded carrots
  • 1 cup (150g) chopped pitted dates
  • ¼ cup (60ml) milk (or plant-based alternative)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and line a 9×5-inch loaf pan with parchment paper.
  2. Sift together the all-purpose flour, baking soda, baking powder, ground ginger, ground cinnamon, and salt in a medium bowl.
  3. Cream the softened butter and brown sugar together in a large mixing bowl until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Fold in the shredded carrots and chopped dates into the wet ingredients until evenly distributed.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, mixing until just combined. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
