- 1 teaspoon black pepper

Instructions
- Preheat your oven to 450°F (230°C).
- Rub the roast with olive oil, garlic, salt, pepper, rosemary, and thyme.
- Place the roast bone-side down in a roasting pan.
- Roast in the preheated oven for 20 minutes.
- Reduce the oven temperature to 325°F (165°C) and continue roasting until the internal temperature reaches your desired doneness (about 1.5-2 hours for medium rare).
- Remove from the oven and let it rest for 20 minutes before carving.
