- 200g (1 cup) pitted dates, chopped
- 100g (3/4 cup) walnuts, chopped
- 150g (3/4 cup) unsalted butter, softened
- 150g (3/4 cup) light brown sugar
- 3 large eggs
- 200g (1 1/2 cups) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- Pinch of salt
- 2 tbsp Greek yogurt
- 100ml (1/2 cup) water
- 50g (1/4 cup) sugar
- 1 tbsp orange blossom water
- Juice of 1/2 orange
Instructions
- Preheat your oven to 350°F (175°C) and prepare your cake tin.
- In a mixing bowl, combine chopped dates with baking soda and pour over boiling water. Let soak for 10 minutes.
- Cream together softened butter and light brown sugar until fluffy. Beat in eggs one at a time, then stir in Greek yogurt.
- Fold in flour, baking powder, cinnamon, and salt. Gently mix in soaked dates and walnuts.
- Pour batter into the prepared tin and bake for 40-45 minutes. Check with a skewer for doneness.
- Cool the cake in the tin for 10 minutes, then transfer to a wire rack.
- For the syrup, combine water and sugar in a saucepan, simmer until dissolved, then stir in orange blossom water and orange juice.
- Let syrup cool slightly, then drizzle over the warm cake.
