Ingredients

  • 100g (3/4 cup) walnuts, chopped
  • 150g (3/4 cup) unsalted butter, softened
  • 150g (3/4 cup) light brown sugar
  • 3 large eggs
  • 200g (1 1/2 cups) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 2 tbsp Greek yogurt
  • 100ml (1/2 cup) water
  • 50g (1/4 cup) sugar
  • 1 tbsp orange blossom water
  • Juice of 1/2 orange

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your cake tin.
  2. In a mixing bowl, combine chopped dates with baking soda and pour over boiling water. Let soak for 10 minutes.
  3. Cream together softened butter and light brown sugar until fluffy. Beat in eggs one at a time, then stir in Greek yogurt.
  4. Fold in flour, baking powder, cinnamon, and salt. Gently mix in soaked dates and walnuts.
  5. Pour batter into the prepared tin and bake for 40-45 minutes. Check with a skewer for doneness.
  6. Cool the cake in the tin for 10 minutes, then transfer to a wire rack.
  7. For the syrup, combine water and sugar in a saucepan, simmer until dissolved, then stir in orange blossom water and orange juice.
  8. Let syrup cool slightly, then drizzle over the warm cake.
