Instructions
- Preheat your oven to 350°F (175°C) and prepare the muffin pan with greased paper liners or cooking spray.
- Mix the flour, baking soda, baking powder, and salt in a large bowl.
- In a separate bowl, combine the mashed bananas, dates, walnuts, brown sugar, yogurt, oil, eggs, and vanilla extract. Mix well.
- Fold the wet ingredients into the dry ingredients until just combined (do not overmix).
- Divide the batter evenly into the muffin cups, filling each about three-quarters full.
- Bake for 18-20 minutes, or until golden brown and a toothpick inserted comes out clean.
- Let the muffins cool for 5-10 minutes, then transfer them to a cooling rack.
