Description

Date, Walnut, and Banana Muffins are a delicious, healthy treat packed with nutrients. Perfect for breakfast or as a snack, these muffins are made with ripe bananas, sweet dates, and crunchy walnuts.

Ingredients

Scale
  • 2 ripe bananas (mashed) ≈ 250 grams
  • 1 cup pitted dates (chopped) ≈ 150 grams
  • 1 cup walnuts (chopped) ≈ 120 grams
  • 2 cups all-purpose flour ≈ 240 grams
  • 1 teaspoon baking soda ≈ 4 grams
  • 1 teaspoon baking powder ≈ 4 grams
  • 1/2 teaspoon salt ≈ 2.5 grams
  • 1/2 cup brown sugar ≈ 100 grams
  • 1/2 cup plain yogurt or buttermilk ≈ 120 grams (or ml)
  • 1/4 cup vegetable oil or melted coconut oil ≈ 60 grams (or ml)
  • 2 large eggs ≈ 120 grams
  • 1 teaspoon vanilla extract ≈ 5 ml

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare the muffin pan with greased paper liners or cooking spray.
  2. Mix the flour, baking soda, baking powder, and salt in a large bowl.
  3. In a separate bowl, combine the mashed bananas, dates, walnuts, brown sugar, yogurt, oil, eggs, and vanilla extract. Mix well.
  4. Fold the wet ingredients into the dry ingredients until just combined (do not overmix).
  5. Divide the batter evenly into the muffin cups, filling each about three-quarters full.
  6. Bake for 18-20 minutes, or until golden brown and a toothpick inserted comes out clean.
  7. Let the muffins cool for 5-10 minutes, then transfer them to a cooling rack.

Notes

  • Use ripe bananas for extra sweetness and moisture.
  • Feel free to replace walnuts with pecans or omit them for nut allergies.
  • For a dairy-free version, use almond yogurt instead of regular yogurt.
  • These muffins can be frozen for up to 3 months.
  • Consider adding cinnamon or nutmeg for extra warmth.
