- 1 cup creamy peanut butter (or any nut butter of your choice)
- 1 cup mixed nuts (like peanuts, almonds, or cashews)
- 1/2 cup dark chocolate chips
- 2 tablespoons coconut oil
- Pinch of sea salt
- Optional: 1/2 teaspoon vanilla extract
Instructions
- Place pitted Medjool dates in a food processor and blend until a sticky paste forms. Soak in warm water for 10 minutes if dry.
- Line an 8×8-inch baking dish with parchment paper and spread 2/3 of the date paste evenly into the dish to form the base.
- Spread peanut butter over the date layer, then top with mixed nuts, pressing them lightly.
- Cover the nuts with the remaining date paste and press down gently to form an even top layer.
- In a microwave-safe bowl, melt dark chocolate chips and coconut oil in 30-second intervals, stirring between, until smooth.
- Pour the melted chocolate over the top layer and spread evenly. Freeze for 30-60 minutes until the chocolate hardens.
- Once firm, remove from the dish using the parchment paper and slice into bite-sized pieces. Store in an airtight container in the fridge.
