Description

A healthier take on the classic Snickers, made with dates, peanut butter, mixed nuts, and dark chocolate for a sweet and nutritious treat.


Ingredients

  • 1 cup creamy peanut butter (or any nut butter of your choice)
  • 1 cup mixed nuts (like peanuts, almonds, or cashews)
  • 1/2 cup dark chocolate chips
  • 2 tablespoons coconut oil
  • Pinch of sea salt
  • Optional: 1/2 teaspoon vanilla extract

Instructions

  1. Place pitted Medjool dates in a food processor and blend until a sticky paste forms. Soak in warm water for 10 minutes if dry.
  2. Line an 8×8-inch baking dish with parchment paper and spread 2/3 of the date paste evenly into the dish to form the base.
  3. Spread peanut butter over the date layer, then top with mixed nuts, pressing them lightly.
  4. Cover the nuts with the remaining date paste and press down gently to form an even top layer.
  5. In a microwave-safe bowl, melt dark chocolate chips and coconut oil in 30-second intervals, stirring between, until smooth.
  6. Pour the melted chocolate over the top layer and spread evenly. Freeze for 30-60 minutes until the chocolate hardens.
  7. Once firm, remove from the dish using the parchment paper and slice into bite-sized pieces. Store in an airtight container in the fridge.
