Description

A moist and flavorful Date and Pear Cake infused with cinnamon and nutmeg, perfect for gatherings or cozy moments with tea or coffee.


Ingredients

  • 180g all-purpose flour (1 ½ cups)
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 150g pitted dates, chopped (1 cup)
  • 2 ripe pears, peeled and chopped (about 2 cups)
  • 180ml boiling water (¾ cup)
  • 115g unsalted butter, softened (½ cup)
  • 150g brown sugar (¾ cup)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 120ml whole milk (½ cup)
  • 50g chopped dates (¼ cup) (optional)
  • 50g chopped pears (¼ cup) (optional)

Instructions

  1. Preheat oven to 175°C (350°F) and grease a 23cm (9-inch) round cake pan.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. Pour boiling water over chopped dates and let sit for 10 minutes.
  4. Cream softened butter and brown sugar together until light and fluffy.
  5. Beat in eggs one at a time, then mix in vanilla extract.
  6. Gradually add dry ingredients to the wet mixture and mix gently until combined.
  7. Stir in softened dates and water, then fold in chopped pears.
  8. Pour batter into the prepared cake pan and smooth the top.
  9. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  11. Top with optional chopped dates and pears if desired before serving.

Notes

  • Use ripe pears for best texture and sweetness.
  • Do not overmix the batter to keep the cake soft and fluffy.
  • Can be stored at room temperature for 3 days or refrigerated for up to a week.
